Flavor is the "decoration" or theme that goes on a role or game in Mafia. Sometimes it is as simple as giving each role (even Townies) a character name that makes them seem to come from the city where the game is set; other times it can involve using modified role names from a particular source, such as a movie or book.
It is important to note that flavor should not clue player's into others roles. "The pretty pink pony" should have just as much of a chance of being mafia as "The monster under the bed".
Flavor is different from, but often goes hand-in-hand with, game mechanics. In the past, games with modified flavor were permitted in New York and The Road to Rome, but now they are restricted to theme games.
For games with heavily modified flavor but few changes to mechanics, see The Old Pond and Texas Justice Mafia.
