Night Start means that the game begins with a Night phase, called Night 1 or sometimes Night 0. Compare Day Start or Cop Head Start.
Traditionally, night start was the default rule, with other possibilities considered to be variations. Games in 2006 and 2007 have tended more toward Day Start, to avoid some criticisms that players can be eliminated before they ever get a chance to play. This seems to be more common in Theme Games than Normal Games.
